The difference is that the KV1 stores one 24-word seed phrase whereas the KV2 stores two 24-word seed phrases.

Ultimately, that is your decision – if you want to rotate your keys in the future, it would be best to store them securely. It is imperative that the tile carrier be stored securely. See the Risk Disclosure below, or on back of the instructions.

While they are physically identical, the KV1 ships with an adjusted quantity of tiles, meaning there are less tiles in the tray. There is no guarantee that you wouldn’t run out of tiles.
